Vegan Cashew Queso Dip

Welcome to Day 10 of 31 Days of Halloween Crafts! Today we’ll be making vegan cashew queso dip.

Ingredients:

- 1 ½ cups unsalted cashews

- ⅓ cup nutritional yeast

- ½ tsp cumin

- 1 tsp coriander powder

- 2 tsp smoked sweet paprika

- Cholula hot sauce to taste

- 1 peeled garlic clove

- 1 tsp kosher salt to taste

- 1 to 1 ½ cups hot water (not boiling)

Blend all ingredients until smooth.

If you want your queso a little thicker you can add more cashews; if you want it thinner you can add more hot water.

Accompanying my cashew queso is the Trader Joe's autumn leaves tortilla chips (I just couldn't resist). A little paprika on top and it's ready to be devoured. I would definitely serve this dip at Halloween party and frankly any party. It's always a big hit whenever I make it and I've had lots of people ask me for the recipe. Try this dip for your next party. I promise you won't be disappointed.
