Onibaba Deviled Eggs

Welcome to Day 17 of 31 Days of Halloween! Today we’ll be making deviled eggs inspired by the Japanese horror film Onibaba.

Ingredients:

- 4 eggs

- 2 tbsp mayonnaise

- 1/2 tsp yellow mustard

- 1/2 tsp mirin

- 1/2 tsp smoked sweet paprika

- Salt to taste

- 1 green onion, dark green part only, finely chopped

- 1/2 tsp black garlic

- Shichimi togarashi to garnish

- 2 radishes for carving

Bring some water to a gentle boil and add 4 eggs. Cook for ten minutes and then remove and cool in an ice bath.

Peel the eggs and cut in half, spooning the yolks into a bowl.

Add 2 tablespoons of mayo, a half teaspoon of yellow mustard, a splash of mirin, coarse salt to taste, and a half teaspoon of smoked sweet paprika. Mash with a fork until smooth. Add black garlic and finely chopped green onions and mix.

Put the deviled mixture into a piping bag fitted with a large star tip and pipe into the eggs.

Sprinkle with shichimi togarashi spice mix.

Now let’s make the Onibaba centerpiece. Flip over one of the eggs and dry any moisture with a paper towel.

Using black powder food dye and a little bit of vodka, paint Onibaba’s face onto the egg.

Carve radishes and put them onto a toothpick for horns. Garnish with chives to look like the grass in the film.

Now whatever you do, don’t put the mask on.
