Mini Ghost Marshmallows

Welcome to Day 30 of 31 Days of Halloween Crafts! Today we’re making mini ghost marshmallows.

Ingredients:

- 3 tsp gelatin

- 1/3 cup water + 1/4 cup of water

- 1 cup sugar

- 1 tsp vanilla extract

- Pinch of salt

- Icing sugar to dust

- Melted chocolate or chocolate icing to decorate

To start, prep a baking sheet or tray with a sheet of parchment paper dusted with icing sugar.

Sprinkle three teaspoons of gelatin over a third of a cup of cold water in a large bowl and let sit for 5 minutes.

Meanwhile, heat a cup of sugar and a quarter cup of water over medium high heat, stirring until the sugar is mostly dissolved.

Brush water around the sides of the pot to remove any sugar crystals while the syrup boils. When the temperature reaches 238 degrees Fahrenheit, take off the heat and pour into the bowl with the gelatin.

Stir with an electric beater manually for a couple of minutes to cool down, then beat at high speed for about ten minutes.

When the mixture starts to get fluffy, you can add vanilla and a pinch of salt, and keep mixing until the marshmallow forms soft peaks and holds its shape.

Fill a piping bag fitted with a large round tip and pipe little ghost shapes onto the tray. Work quickly as the mixture will slowly set and become difficult to pipe.

Dust with more icing sugar and brush off any excess.

Add little faces with melted chocolate or chocolate icing and your wee ghosties are complete.
